Baked Salmon with Classic Caper Sauce and Herb Butter

Listen up — this is baked salmon done the RIGHT way. No dry, flavorless fillets here. You lay your salmon in the dish, pile on the butter, hit it with chopped parsley, shallot, nutmeg, and seasoning, then baste it frequently until it's golden and glistening. The caper sauce goes over the top at the end and pulls the whole thing together. Big Daddy's pro tip: try it with tomato sauce instead of caper sauce sometime. You will not be disappointed. Not even a little.

  • 2 slices of salmon
  • 1/4 lb butter
  • 1/2 teaspoon chopped parsley
  • 1 shallot
  • Salt pepper, and grated nutmeg to taste
  • Caper sauce for serving
  • Optional: tomato sauce as an alternative to caper sauce

Method

  2. Preheat oven to a moderate heat. Lay the salmon slices in a baking dish.
  3. Place pieces of butter over the salmon. Add chopped parsley, minced shallot, salt, pepper, and grated nutmeg.
  4. Rub a little of the seasoning directly into the fish on both sides.
  5. Place in the oven. Baste the salmon frequently with the butter and juices throughout cooking.
  6. Cook for approximately 45 minutes, until the salmon is cooked through.
  7. Remove the salmon from the dish and drain for a minute or two.
  8. Lay the salmon on a serving dish. Pour caper sauce over it and serve immediately.
  9. Variation: Tomato sauce makes an equally delicious accompaniment in place of caper sauce.
